Ingredients:
1 lb. sea scallops, rinsed
1 T grass-fed butter
1 T olive oil
2 cloves garlic, minced
¾ lb. bacon
1 lemon, halved
Pre-heat oven to 3500. Melt butter in a baking dish; mix in olive oil and garlic. Cut bacon in half and wrap around scallops. Secure with a toothpick. Dip bacon wrapped scallops in oil mixture on both sides and place in baking dish. Squeeze the lemon over scallops.
Bake 30 minutes. Turn oven to low broil and broil about 2 minutes until top of bacon is brown and crispy.
