Berry Cobbler

Tis the season for berries! This is a super easy way to make a delicious gluten-free cobbler. The great thing about this recipe is that you can make individual servings that are hot and fresh each time you make it.

Organic blackberries from my garden are my favorite but any berries will do. Blackberries are loaded with vitamin C, A, E, K, and B vitamins, minerals and antioxidants lutein and zeaxanthin. They contain impressively high levels of phenolic flavonoid phytochemicals that protect against aging, inflammation, cancer, and other neurological diseases.

Berry Cobbler

Ingredients:
2 c fresh berries, washed and cut
2 T grass-fed butter or ghee
1 pkg. gluten free sugar cookie dough (butter & eggs to make the dough)
 
Put 1 t melted butter in bottom of ramekins. Fill the bottom with fruit. Mix your favorite gluten-free cookie dough mix or buy one already mixed. I love Pamela’s mixes. Cover the fruit with about 2 Tablespoons of cookie dough.

Bake at 350o for 18-20 minutes or until the fruit is bubbly and the top is brown. Serve with dairy free ice cream or coconut cream whipped topping.
