Hot Alabama Fruit

You have to try this hot, buttery, spiced fruit dish. It is sure to be a favorite for all ages at your holiday table. It is one of my family’s favorite side dishes that is sweet enough to be a wonderful dessert especially if you are looking for a gluten free treat.

HOT ALABAMA FRUIT

3 peeled, sliced pears or 1 lg. can, drained
2 small cans pineapple tidbits, drained
4 sliced peaches or 1 lg. can, drained
4 peeled, sliced apricots or 2 cans, drained, sliced
1 jar maraschino cherries, drained
½ t nutmeg
½ t cinnamon
3/4 c organic brown sugar
2 T tapioca flour
2 T coconut flour

8 T butter

Melt 4 T butter in 9x13 pan. Mix coconut and tapioca flour into butter. Add fruit into pan with the cherries last. Mix sugar and spices. Sprinkle over top. Melt the other 4 T of the butter and pour over. Bake at 325o for 1 hour.
