Broccoli Tidbits

Broccoli Tidbits make a great gluten-free appetizer or side dish with a stuffing like quality. My family loves to gather in the kitchen and appetizers get the party started! My oldest daughter really enjoys making and serving appetizers. This recipe is one of her favorites! I adapted it to make it gluten free but you could also exchange the butter for ghee and leave out the parmesan to make it dairy free. The balls can be made ahead of time, frozen on cookie sheets before baking and then stored in a container in the freezer until ready to bake.

Broccoli Tidbits

3 c steamed and coarsely chopped fresh broccoli
3 1/2 - 4 c gluten-free bread crumbs
1 med. onion-minced fine
4 eggs-well beaten
¾ c butter-melted
½ c grated parmesan
½ t salt
1 t pepper
½ T garlic powder
1 t thyme
½ t parsley
½ t celery salt
½ t sage
¼ t rosemary
 

Coarsely chop slices of your favorite gluten-free bread in a food processer to make 4 cups. Steam and coarsely chop broccoli. Mix all ingredients adding bread crumbs last. Add bread crumbs until the mixture can be shaped into bite size balls. Place on greased or silicon lined baking sheets and bake at 325o for 15 minutes or until brown. Makes about 3 dozen.
